Featuring more than 100 recipes from Samin and more than 150 illustrations from acclaimed illustrator Wendy MacNaughton! More than 1 million copies sold! Winner of the James Beard Award and IACP Cookbook Award! Perennial New York Times bestseller! Inspiration for the popular Netflix series! In the tradition of The Joy of Cooking and How to Cook Everything comes Salt, Fat, Acid, Heat , an ambitious new approach to cooking. Chef and writer Samin Nosrat has taught everyone from professional chefs to middle school kids to author Michael Pollan to cook using her revolutionary, yet simple, philosophy. Master the use of just four elements— Salt , which enhances flavor; Fat , which delivers flavor and generates texture; Acid , which balances flavor; and Heat , which ultimately determines the texture of food—and anything you cook will be delicious. By explaining the hows and whys of good cooking, Salt, Fat, Acid, Heat will teach and inspire a new generation of cooks how to confidently make better decisions in the kitchen and cook delicious meals with any ingredients, anywhere, at any time. Echoing Samin’s own journey from culinary novice to award-winning chef, Salt, Fat Acid, Heat immediately bridges the gap between home and professional kitchens. With charming narrative, illustrated walkthroughs, and a lighthearted approach to kitchen science, Samin demystifies the four elements of good cooking for everyone. Refer to the canon of 100 essential recipes—and dozens of variations—to put the lessons into practice and make bright, balanced vinaigrettes, perfectly caramelized roast vegetables, tender braised meats, and light, flaky pastry doughs. Destined to be a classic, Salt, Fat, Acid, Heat just might be the last cookbook you’ll ever need. With a foreword by Michael Pollan. *Named one of the Best Books of the Year by: NPR, BuzzFeed, The Washington Post, Chicago Tribune, Rachael Ray Every Day, San Francisco Chronicle, Elle.com, Glamour, Eater, Newsday, The Seattle Times, Tampa Bay Times, Tasting Table, Publishers Weekly , and more!*

  1. Insanely fast shipping and great communication!! I would absolutely purchase from this seller again definitely a solid choice. Genuinely appreciate sellers like this who don’t waste time getting our purchases shipped out, and communicate well so you’re not in the dark for days and days wondering why you have a tracking number yet the post office doesn’t physically get the package for days on end. I hate that and thankfully this seller doesn’t do that so I recommend this seller for sure any day!!

  2. This was a 10 star experience, 5 stars are not enough! As soon as i placed the order, the seller sent a message telling me when the item would be shipped & how & to please notify then with any questions or concerns. I'd never seen that before.i was impressed. Then the item came the day after I'd ordered it! I got another message with all tracking info. I couldn't believe how fast it came. It was packed so carefully & arrived in perfect shape. This seller gave exceptional service in all areas!

  3. this seller drop ships from amazon, and the tracking number sucks, ups is who will deliver but they give you a odd tracking number that never updates and you will soon get a email from ups. and this seller will not respond quickly, he will only message you back after it was delivered. so all your questions before he answered me back was not addressed in his message back. meaning he dont read his messages before he brags about the package was delivered and to give them a good feedback.
